Eggless Banana Bread

Ingredients

  • 4 to 5 medium ripe bananas
  • 2.5 Cups Flour
  • 1/2 Cup Oil
  • 1/2 Cup Sugar
  • 1 Cup Brown Sugar
  • 1/2 Teaspoon Vanilla
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Nutmeg
  • 2.5 Teaspoon Baking Powder
  • 2 Teaspoon Baking Soda
  • 1 Pinch Salt
  • 1 Tablespoon Apple Cider Vinegar (Any vinegar will do)
  • Optional: Walnuts

Instructions– Makes approximately 12-15 muffins

  • Add bananas, brown sugar, and sugar in the bowl and mix.
  • Add flour, baking powder, baking soda, salt, vanilla, apple cider vinegar, and oil. Mix until batter is smooth. The batter should be a little more liquid than cake batter.  You may need to add more flour if it needs to be thickened.
  • *Optional to add walnuts
  • Spray the pan with Pam or a little oil and fill with batter.
  • Bake for 20-25 minutes at 375 Degrees. Let it cool for 15 minutes and enjoy!
