Eggless Banana Bread
Ingredients
- 4 to 5 medium ripe bananas
- 2.5 Cups Flour
- 1/2 Cup Oil
- 1/2 Cup Sugar
- 1 Cup Brown Sugar
- 1/2 Teaspoon Vanilla
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Nutmeg
- 2.5 Teaspoon Baking Powder
- 2 Teaspoon Baking Soda
- 1 Pinch Salt
- 1 Tablespoon Apple Cider Vinegar (Any vinegar will do)
- Optional: Walnuts
Instructions– Makes approximately 12-15 muffins
- Add bananas, brown sugar, and sugar in the bowl and mix.
- Add flour, baking powder, baking soda, salt, vanilla, apple cider vinegar, and oil. Mix until batter is smooth. The batter should be a little more liquid than cake batter. You may need to add more flour if it needs to be thickened.
- *Optional to add walnuts
- Spray the pan with Pam or a little oil and fill with batter.
- Bake for 20-25 minutes at 375 Degrees. Let it cool for 15 minutes and enjoy!
