Everyone has been asking about Pho. S is obsessed with this and people who come into town and ask where the best pho place is. Honestly, no one makes it better than my mommy, but she taught me a shortcut that is suitable for a beginner like me. My dad is a dang good pho-cooker too!

I actually started learning for S. I’m not sure if you all are aware, but most pho that you buy in restaurants add MSG, which has been linked to cancer. I know…what isn’t linked the cancer, but MSG makes sense, it’s a chemical mix that heightens the broth flavor.

S has a horrible reaction to MSG…aka headaches and stomach aches after, but he loves it so much, he’ll usually suffer. So in response, I called my mom to figure out a NO MSG recipe and mommy did not fail!

This is so easy that my friend Mike made it and S made it himself as well. This is chicken pho, but S and I usually do seafood with fish balls and shrimp. Hopefully you can jump on the pho-mania bandwagon using my mom’s recipe below.

Pho Gha


  • 1 packet of rice noodles (Vermicelli)
  • 2-3 pieces of chicken breast or thigh
  • Chili sauce
  • Hoisen Sauce
  • Scallions
  • 1 Onion
  • Ciliantro
  • Limes
  • Bean Sprout
  • Ginger
  • Fish Sauce


  • Take a giant pot and fill it with water.
  • Then put the chicken breasts in to cook and turn the water to medium heat
  • Add about 3 Tablespoons of Fish Sauce, a handful of salt, some (half a stick) ginger slices, whole garlic cloves
  • Let the broth boil for an hour
  • Once the chicken is cooked, take it out and let it cool on a plate
  • Then you will need to season the broth. Get about 4-6 cups of water, add about 6-8 Tablespoons of fish sauce, a bouillon cube or can of chicken broth, a handful of salt, a handful of sugar and pour it into the existing broth and taste.
  • Let it boil for about another 15 minutes and then slice the onion and scallion and add it in at the last minute to cook them through


  • Cook according to directions


  • Chili Sauce
  • Hoisin Sauce
  • Sliced Limes
  • Bean Sprouts
  • Cilantro


  • Put the noodles, bean sprouts, cilantro, some fresh scallions, and then put the broth in
  • Then on the table, people can put in the sauces they want
  • This pot would make enough for about 8-10 servings
